Tiny Garbanzo Crepes
These have a nutlike flavor that really works with lots of dips and fillings. You can make them in various sizes, depending on your party size.
Serves 12
Ingredients
2 cups chickpea (garbanzo) flour
2 cloves garlic, crushed
1 teaspoon Tabasco sauce or other red hot sauce
1 teaspoon salt or to taste
11⁄2 cups water
Olive oil as needed for cooking the crepes
Mix everything but the oil in a blender, pulsing and scraping down the side of the jar.
Heat some oil in a nonstick pan. Add 1 tablespoon of the batter for 1 1⁄2-inch crepes.
Cook until very crisp on the bottom; do not turn. Remove from heat and keep on paper towels or a platter. Now you can add fillings of your choice and close, or fold in halves and dip into a sauce.
